Alkaline Recipe #62: Spinach with Almonds

This delicious and quick stir-fry dish gives you a real vitamin boost in these cold winter months.

Spinach is a real alkaline superfood – it is highly nutritious, extremely rich in antioxidants and a rich source of Vitamin A, Vitamin C, Vitamin E, Vitamin K, Magnesium, Iron, Folic acid, Omega-3 fatty acids just to name a few as the list could go on and on … !

The almonds give it a crunchy taste and make this dish a real treat.

Spinach with Almonds

Serves 2

Ingredients

600g fresh spinach
1 small onion
1 garlic clove
1 ripe tomato
8 tbsp oil e.g. rape seed oil or coconut oil
80g skinned almonds
1 dried red chilli
1 tsp curry powder
1/2 tsp ground coriander
A pinch of celtic sea salt or himalayan salt

Instructions

Wash the spinach and tear into single leaves. Peel the onion and garlic and cut into small pieces. Wash the tomato, cut into dices and take out the stem.

Heat a Wok pan or a deep frying pan and heat the oil in it. Roast the almonds and the crumbled chilli whilst stirring until the almonds have turned golden brown. Remove them from the pan and put them onto a sheet of kitchen roll which can soak up the excess oil.

Gently fry the onion and garlic until they start to soften. Add the tomato, curry powder and coriander and gently stir-fry for approx. 2 minutes.

Add the spinach and stir-fry for a further 2-3 minutes.

Season the dish with salt and stir in the roasted almonds. It is optional to add in the chilli crumbles if you like to give it a spicier taste.

    I thought Rape seed (oil) was toxic and is only good for pigs, for which it was originally grown? Then they noticed that the pigs went blind….
