Alkaline Recipe #65: Mixed Avocado Salad

This delicious salad with avocado and spinach is a light and healthy dish, ideal for lunch- or dinner time!

This salad is packed with highly alkalising foods such as avocado, spinach, tomato and lettuce providing you with all the nutrients your body needs.

Now that the snow has finally started to melt away and spring is around the corner, it is the perfect time to make healthy salads an integral part of your diet again!

Mixed Avocado Salad

Serves 2

Ingredients

1 large avocado
1 tomato
2 handfuls of fresh spinach
2 handfuls of green lettuce of your choice (e.g. lambs lettuce)
2 grated carrots
1 small garlic clove
1 small onion
10-12 almonds
2 tbsp extra virgin olive oil
Freshly squeezed juice of 1 lime
Freshly ground pepper
Optional: Himalayan crystal salt or celtic sea salt

Instructions

Thoroughly wash and drain the green lettuce and spinach and put into a big salad bowl. Peel and grate the carrots, add them to the salad bowl, thoroughly mix up all the ingredients and put bowl to the side.

Cut the avocado, onion, garlic and tomato into small pieces. Put all the pieces into a seperate wooden bowl and mix all the ingredients together. Mash up all the ingredients with the help of a fork until it all becomes like a puree. Add 2 tbsps of olive oil and the lime juice and mix it all together.

Put the avocado puree over the spinach, carrots and green lettuce. Chop up the almonds into small pieces, add them to the salad and mix up all the ingredients.

Season the salad to taste and enjoy every bite of this delicious and highly alkalising avocado salad!
