This meal is packed with alkaline goodness!

Aubergine, or eggplant in other countries, is a rich source of fiber and manganese, as well as a host of other vitamins and minerals.  Not only that – it also contains important phytonutrients, many of which have antioxidant activity.

Plus, the sweet potato is an amazing source of beta-carotene!  Add in the zucchini and carrot, and you have a fantastic meal that’s healthful, nutritious, and delicious.

Super-Hearty Minestrone

Serves 2

Ingredients 

1/2 cup of eggplant (aubergine)
1/2 cup of sweet potato
1/2 cup of zucchini (courgette)
1/2 cup of carrot
1/4 red onion
2 cloves of garlic
1/2 cup of beans (navy, kidney etc)
1 tbsp coconut oil
1 cup of vegetable stock
1 handful of basil
1 cup of tomato juice (fresh or bought)
Himalayan salt & black pepper

Instructions

1. Wash and cube the aubergine, potato and courgette and dice the carrot and onion.

2. In a large pot, gently sauté these ingredients in the coconut oil for about 2 minutes.

3. Now add the beans (can be any bean you like) and add the stock and tomato juice – bring this to a boil and then lower the heat to simmer for just 8-10 minutes.

4. Stir in the basil and season to taste

    Could you please include some more recipes that don’t include nightshades. it seems I’ve developed an allergy to them and its doing my head in figuring out what to eat instead!!

    Hi Ross,
    There seems to be so much conflicting information about acid food triggers, especially with regard to tomatoes and onions. I have been following an acid free diet for about 6 weeks and have seen a noticeable difference. I cut out all the acid triggers including the above. You say that tomatoes become alkaline after eating, so why are they always listed as a trigger food? I have a book by Dr Jonathan Aviv, who says ‘ Tomato is acidic and inflammatory for people with acid reflux because it activates and releases tissue bound pepsin.’ I would be interested to hear your thoughts on this.     Husband has cancer (prostate). It is holding but he is schedule for surgery if needed. We are alkaline but he came from eating meat, went alkaline 3 months ago and has lost 10 lbs. We are juicing carrot and spinach to help fight the cancer, no sugar taken in, eating fish, some chicken, he is already gluten free. Ideas on what else to feed him to gain weight. His body was just used to more meat. Help on recipes that will help gain weight not lose weight.

    This would be excellent with the addition of chopped cabbage or greens such as baby kale :-). Also, I’m not vegetarian so I use home made bone stock instead of vegetable broth for added minerals, nutrients and depth of flavor.
