Texan “Caviar” Salad with TWO Dressings

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can black eyed peas, drained and rinsed
  • 1 cup frozen corn kernels, thawed, or 1 fresh corn cob, shucked
  • 4 scallions, chopped
  • ½ cup red onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 cup grape tomatoes, halved
  • 1 avocado, diced
  • ½ cup fresh cilantro, chopped

Instructions

  1. To make the Texan Caviar Salad, in a large bowl, combine the black beans, black eyed peas, corn, scallions, red onion, bell peppers, jalapeno pepper, grape tomatoes, avocado, and cilantro.
  2. Pour the dressing over the salad and toss well to coat.
  3. Chill the salad for at least 30 minutes before serving
