Alkaline Diet Recipe #139: Carrot, Broccoli and Bean Shoot Salad

Beans are part of the legume family who has lots of fiber. Not only that, Broccoli is a sprout that help fight against cancer and as we all know that carrot is very well known to help us with our eye sight. Mixing all this good nutrients in one salad would seem to be impossible, but we bring you the carrot, broccoli and bean shoot salad.

Carrot, Broccoli and Bean Shoot Salad

Serves 2

Ingredients

Salad:
3 cups carrots, shredded
2 cups broccoli slaw or finely julienned broccoli stalks
2 cups mung been shoots
1 large cucumber, peeled, seeded and julienned
2 cups fresh coriander, chopped finely
1 bunch green onions, sliced finely

Dressing:
1/2 cup freshly squeezed lime juice
1 tablespoon of Bragg Liquid Aminos or Soy Sauce if transitioning
3 tablespoons cold pressed sesame oil
1 crushed garlic clove
1 deseeded red chili

Instructions

1. Toss all of the vegetables together with the cilantro.

2. Place all of the dressing ingredients, except the chili and garlic, in your blender and pulse a few times until well combined. Stir in the garlic and chili.

3. Pour the dressing over the salad and season, to taste.
Garnish with sesame seeds or chopped raw nuts if desired
