Alkaline Recipe #139: Sari Swig’s Gazpacho
This is a great summer soup that is very healthy, and another great alkaline recipe. I absolutely LOVE gazpacho and gorge myself on it every time we go to Mallorca or the Spanish mainland (the best I’ve found is in Palma though 🙂
The combination of ingredents gives you all the punch you’d expect from a gazpacho and the best thing is – this favourite of mine is totally alkaline. Gazpacho is an alkaline recipe! I love it when a plan comes together…
I’ve tried a few home made Gazpacho recipes and this one is a belter. It’s from our friend Sari Swig at cookalkaline.com
Sari Swig’s Gazpacho
Serves 4
Ingredients
2 Red Bell Peppers
2 Orange Bell Peppers
1/2 tsp apple cider vinegar
1 TBSP Olive Oil
1/2 cup avocado diced
1/2 cup cucumber, diced
1/2 cup tomato, diced
sea salt and pepper to taste
Instructions
Char the peppers over a gas flame or under your broiler. They will get very black. Immediately place into a brown paper bag and let steam about 10 minutes. Remove from bag and peel off the skin. Rinse under cold water to remove any more blacken flecks of skin and the seeds and core. Put into a blender. Blend until smooth. Pour into a bowl. Stir in the vinegar and olive oil.
To Serve: Pour into bowls and garnish with the avocado, cucumber and tomato. Enjoy
