Cleansing Green Coconut Curry

This is so quick and easy, gets 2-3 serves of greens in per person (a HUGE win, as you’ll see in my new book The Alkaline Life) and adds in the powerful anti-inflammatories, healthy fats and the antibacterial/antifungal garlic too!

It really only takes about 12 minutes to make too, and is quick to prep, and quick to clean up after.

Here’s why I LOVE this super-alkaline recipe:

  • Collard Greens and Kale: These super-alkaline leafy greens are high in chlorophyll, which helps in detoxifying the body by binding to toxins and heavy metals, aiding their removal. They are also rich in fiber, promoting healthy digestion and elimination, key aspects of detoxification.
  • Ginger and Turmeric: Both are renowned for their anti-inflammatory properties. Ginger aids in digestion and can help to settle the stomach, while turmeric is known for its curcumin content, which has been shown to support liver function, a crucial organ in detoxification.
  • Cumin Powder: This spice is known for its digestive benefits. It helps in stimulating the secretion of pancreatic enzymes, substances necessary for proper digestion and nutrient assimilation.
  • Coconut Milk: Rich in medium-chain triglycerides (MCTs), coconut milk can help boost metabolism and aid in detoxification. It’s also a healthy fat source, important for maintaining the health of cells, including those in the liver.
  • Lemon Juice: High in vitamin C, lemon juice supports the immune system. It also aids the liver in flushing out toxins and has an alkalizing effect on the body, which is beneficial for detoxification.
  • Garlic: Known for its antibacterial and antiviral properties, garlic stimulates the liver to produce detoxification enzymes that help filter toxic residues from the digestive system.
  • Coconut Oil: The MCTs in coconut oil are easily absorbed and metabolized by the liver, providing a quick source of energy and aiding in the detoxification process.
  • Himalayan Pink Salt: This type of salt contains numerous minerals and elements that help balance the body’s pH, thus supporting detoxification through its alkalizing effect.

These ingredients collectively contribute to a supporting the body’s natural detoxification systems, helping to cleanse the liver, aid digestion, and supports your body’s alkaline buffers, and fights inflammation!  Wow, what a winner!

Cleansing Green Coconut Curry

Ingredients

Scale
  • 1/2 bunch of collard greens
  • 1/2 bunch of kale
  • 2 spring onions/scallions/salad onions
  • 1 tsp fresh ginger (minced, or finely chopped)
  • 1 tsp fresh turmeric (minced, or finely chopped)
  • 1 tsp cumin powder
  • 1/2 cup of coconut milk (from a can, not the milk substitute)
  • 1/4 lemon, juiced
  • 3 cloves of garlic (minced, or finely chopped)
  • 1 tbsp coconut oil
  • Pinch of himalayan pink salt
  • Optional: a touch of rice malt syrup (as a natural sweetener)
  • Optional: red chilli, thinly sliced, seeds removed

Instructions

  1. In a pan, sauté finely chopped garlic and ginger in olive oil.
  2. Add chopped collard greens and kale, cooking until they start to wilt.
  3. Stir in turmeric, cumin, and a pinch of Himalayan pink salt for flavor.
  4. Pour in coconut milk and bring to a gentle simmer.
  5. Add the chopped spring onion and cook for a further 2 minutes.
  6. Finish with a splash of lemon juice, the sliced red chilli and a drizzle of rice malt syrup.
  7. Serve hot, enjoying the rich flavors and detoxifying benefits.
