Mineral-Rich Lentil Soup – Brothy & Full of Greens

Serves: 4–6

Ingredients:

1 cup green or brown lentils, rinsed
1 tablespoon extra virgin olive oil
1 brown onion, finely chopped
3 cloves garlic, minced
3 celery stalks, sliced
2 carrots, chopped
1 zucchini, diced
1 teaspoon dried thyme
1 bay leaf
6 cups filtered water or vegetable broth
1 strip kombu (optional, for added minerals)
2 large handfuls kale or silverbeet, chopped
Juice of ½ lemon
Himalayan salt to taste
Fresh parsley, to serve
Optional: drizzle of tahini or olive oil

Instructions:

1. Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes until softened.
2. Add garlic, celery and carrots. Cook for another 3–4 minutes.
3. Stir in lentils, zucchini, thyme and bay leaf.
4. Add water or broth and kombu if using. Bring to a boil, then reduce to a gentle simmer.
5. Simmer uncovered for 25–30 minutes, until lentils are tender but not mushy.
6. Stir in chopped greens and cook for another 5 minutes until wilted.
7. Remove bay leaf and kombu. Add lemon juice and salt to taste.
8. Serve brothy, topped with fresh parsley and a drizzle of tahini or olive oil if desired.
