The Alkaline Power Bowl
Ingredients
Scale1 ripe avocado (200g)
2 medium sweet potatoes (300g total), baked or steamed
2 cups steamed spinach (360g cooked weight)
1 cup cooked white beans (200g)
1 cup cooked quinoa (180g)
2 cups cucumber, chopped (240g)
1 medium tomato (120g), chopped
2 tbsp tahini
2 tbsp extra virgin olive oil
Juice of 1 lemon
2 Brazil nuts
2 tsp ground turmeric
Himalayan salt, to taste
Optional: fresh parsley or coriander to garnish
Instructions
Cook the sweet potatoes (bake, steam or roast).
While they’re cooking, steam the spinach and prep the quinoa and white beans (or use pre-cooked).
Chop the cucumber, tomato and avocado.
Whisk together the tahini, lemon juice, olive oil, turmeric, and a pinch of salt to make the dressing.
Divide all ingredients between two bowls.
Drizzle with dressing, top with the Brazil nut and chopped herbs, and enjoy.
