Alkaline Recipe: Salted Caramel Slice

caramel slice

OK, this one is outrageous. You are going to LOVE this. I would go as far as to say it’s possibly the most loved recipe I have EVER shared with my private clients in the Alkaline Base Camp.

This is my Alkaline Salted Caramel Slice!

It is PERFECT right now, with Christmas approaching, to take to parties and share with family and friends.

And it is SO quick and simple, contains loads of delicious healthy fats, protein and very, very little sugar per serve – yet it is SO full of flavor and deliciously moreish.

Here’s what Timea, one of my long-term members in my inner-circle coaching membership (The Alkaline Base Camp) had to say:

Let’s get stuck into it:

Ross’ Alkaline Salted Caramel Slice

Makes 12 Slices
Ingredients

Base:

1.5 cups of shredded coconut
6 soft Medjool dates
A pinch of cinnamon

Layer One:

1/2 cup coconut cream
3 Medjool dates
2 tbsp coconut syrup
A pinch of Himalayan salt (or any natural / sea salt)
1 tbsp coconut oil
1/2 cup tahini
a few drops of vanilla essence

Layer Two:

3 tbsp coconut oil
1 tbsp cacao powder
a few drops of vanilla
pinch cinnamon
1 tbsp coconut syrup

Instructions

  1. Start by blending the base ingredients together until they look like a regular ‘biscuit base’ then add these to a baking tin (regular round one or a rectangle one – whichever you have)
  2. Next blend the layer one ingredients and add this on top of the base.
  3. Now make layer two by, you guessed it, blending these ingredients together and add these on top!
  4. If you are going to eat all of them between yourself, family, guests, etc these within a couple of days, put straight into the fridge. However, if you are planning on having them slowly over a week or two, cover and put in the freezer as sliced, individual serves.
  5. You can remove them and enjoy within just 10-15 minutes of taking them out of the freezer.

And that’s all there is to it! Takes so little time, can be made at the last minute and it needs only 9 ingredients!

Absolutely delicious! I made mine just using a small food chopper for each layer and it worked perfectly. Freezes wonderfully (cut into slices first) and you can eat it from frozen if you can’t wait for it to defrost :).

    Wow-wee!!
    You’re not wrong saying it’s outrageous 🤣😂
    Incredibly scrumptious 😋
I used bliss balls recipe for the base as my husband doesn’t like coconut.
Keeping these cheeky little things in the freezer so I don’t scoff them all at once
    Thanks Ross 🙏🏻😊

I’m in South Africa and I cant get coconut syrup. Is there something else I can substitute it with?

    • ross Reply

Rice malt syrup (also known as brown rice syrup) is great.

Is there a substitute for “coconut syrup”?

Hi, there seems to be a missing ingredient from the Layer 2 instructions? It says to blend but there is only 1 ingredient, the coconut syrup. Should cacao powder be in there, as the picture looks dark like that?
Also please can you quote grams, it’s really tricky working out cups for different types of ingredient.
    Thanks
    Lucy

    Hi Ross

I do not have a food processor. What brand / make to you recommend? I do have a Vitamin blender, but that machine seems to harsh for mixing up some foods…
    Thanks, Phoebe

Hi Ross..for the base..when you say “blend”..do you mean in a blending machine?..I seem to think that because there is no liquid..it wont blend in a machine?

      • ross Reply

A blender or food processor works 🙂

Hi Ross – Thanks for this delicious looking dessert recipe!
I can’t do dates; would rice malt syrup work as a substitute please (no fructose)?
Would love to make this if there’s a substitute for the dates ????
